Shredded Chicken Tacos

Keeping it tasty this week. My go to shredded chicken taco recipe. SO simple and delicious.

Ingredients:

  • 2-3 Chicken Breasts
  • 1- Package of Frontera Chicken Taco Skillet Sauce (see image below)
  • Cabbage
  • Radish
  • Juice from 1 lime
  • Cilantro
  • Tomato
  • Avocado
  • Corn Tortillas

I'm not really a measurer when I cook, so this is a loose recipe! As is, it's gluten and dairy free, but you could always sub in flour tortillas and top with cheese or sour cream. The chicken breast go in the crock pot on low, (with the skillet sauce) for several hours. The chicken will just shred apart after cooking. Yum. Add everything else to make a slaw type topping. And load it all on the tortilla...or in a bowl and scoop with chips. So easy and delicious. The skillet sauce can be found at Whole Foods, and most other grocery stores.

Combine the rest of the ingredients (and whatever else you'd like to add) to make a "slaw" type topping for the taco. I use my mandolin slicer to shred the cabbage and radish. Add tomato, avocado, cilantro, and lime juice. Salt and pepper. And whatever else sounds good!

Warm the corn tortilla, load with shredded chicken. Top with slaw. Enjoy!
